How did you become the manager of such a fabulous hotel and restaurant?
I initially heard about the opportunity through the management company I was working for at the time ‘Interstate Hotels’ and was really excited by the prospect of managing a new opening in Leeds, I met with Helen Green Associate Director at Town Centre Securities who own the hotel and restaurant about a GM position when the hotel was first being built, and after speaking at length about what a great opportunity it was it seemed like a no- brainer. I have often thought about returning to my home town of Leeds and opening a new hotel right in the centre seemed like an exciting prospect.
What would you say makes Marco’s restaurant and Ibis style Hotel such a success?
It’s not just one thing that makes Marco’s and Ibis styles a success, it’s a multitude of things. But most importantly, I would say a mixture of our excellent staff who are always happy to help and our brilliant location in the city centre right next to the first direct arena. The hotel rooms are individually designed using local theming, providing some fantastic talking points and providing a unique guest experience which I don’t believe is replicated in other hotels across the city.
If you could invite anyone dead or alive to stay overnight with you at Ibis style and have dinner at Marco’s who would it be and why?
It would have to be Leeds footballing legend Billy Bremner. He would probably approve of the Yorkshire theme that we have running through the hotel, but probably not approve of the form our current Leeds team are displaying!!
Which of the many options of dishes on your current menu are your favourite and which wine would you would you recommend?
I would recommend the 35 Day aged Fillet Steak supplied by royal warrant appointed butchers Campbell Brothers, its served with a rocket and Zarpellon salad, topped with garlic butter and served with Rosemary fries, all washed down with our fantastic Argentinian Malbec.
What gives you the most job satisfaction?
If the customers are satisfied, then so am I. I always encourage my team to go above and beyond what is expected of them, as it’s often the little things that customers remember when they leave the hotel. For example, friendly interactions or a time they went out their way to help a customer, I find it creates for a homely atmosphere around the hotel.
Is there a specific women dead or alive who has inspired you in your life?
Michelle Obama, I love her attitude, her commitment to charity work and her work ethic in general. I think she is possibly the classiest example of a first lady ever and great example to women and girls alike.
What advice would you give to any woman reading this article who would like to follow in your career footsteps?
I would say be prepared to work extremely hard, the service industry is a tough industry and often a round the clock job. But you meet some fantastic people and have many magical moments that make it worthwhile in the end.
